Sunday fun

It's amazing to me all the fun stuff that can happen while I'm in Utah. I love that i have so many options and can easily go anywhere or see anyone I want. It was nice to go to church this sunday & understand the talks. After church I made I pasta dish for our sunday dinner. My sister in law Amy gave it to me & I really like it. Even my little brother Jaxon liked it and he seriously hates everything!
This dish is super easy, yummy & you don't need many ingredients. If you are interested in making it here is the recipe:
Rigatoni with Sausage & Tomatoes

Adapted from Bon Appétit

2 tablespoons olive oil

3/4 lb. sweet Italian sausages, chopped

1 cup chopped onion

3 garlic cloves, minced

1 28-ounce can crushed tomatoes

1/2 cup heavy cream

1 pound rigatoni

1/2 cup chopped fresh basil

1/3 cup grated Parmigiano-Reggiano cheese

Heat oil in heavy large skillet (preferably cast iron) over medium to
medium-high heat (with cast iron you can cook on a slightly lower temp). Add
sausage, about 5 minutes.  Add onion and garlic; sauté until onion is tender
and sausage is browned, about 3 minutes longer. Add tomatoes and cream.
Reduce heat to low and simmer until sausage mixture thickens, about 3
minutes. Season to taste with good sea salt and a little fresh ground
pepper.

Meanwhile, cook pasta in large pot of boiling salted water until al dente
(Barilla or De Cecco are my favorite brands usually rigatoni cooks for 11
minutes).  Drain, and return pasta to same pot. Add sausage mixture and toss
over medium-low heat until sauce coats pasta. Sprinkle with basil and then
Parmesan. Toss and serve!

After dinner I went over to the Kemp's and we chatted it up. They got a brand new red sports car that I am sure Jeremy will love to drive around when he is town. As we were leaving our house there was a water show in our own backyard.

This is Elle's first day of school outfit. My dad is wearing her skirt & scarf. She picked it out if you can't tell by all the sparkles!  Johnny said she looked like a go-go dancer :)
Elle has this amazing talent where she can pop her tongue on the top of her mouth so loud. Seriously if she does it close to your ear you feel as you might go deaf! She was doing at for Atlas & it made him laugh so hard. It's so funny though because he has a scream that mixes with his laugh.
Ashley also introduced me to the greatest Application for the Iphone ever! It's called Fat Booth. It simply shows you what you will look like if you keep eating Cafe Rio for lunch.

It was so funny to see what everyone in my family looked like. Such a funny night. I love being home with my family!

  1. Ok,that picture of what you would look like if you kept eating cafe rio is SO funny. I'm glad you had a great trip visiting your family. I also loved the pics of you and Diesel after the day at the beach. Pugs are just made to be photographed.

  2. I know we were laughing so hard! Seriously I still want diesel & roxy to meet! Im so sad we wont be able to hang out on the cruise. We will miss you guys!
